Black Bean Quinoa Patties

Black Bean Quinoa Patties are one of my favorite plant-based foods to make. They are not complicated to assemble, quite nutritious, and pair nicely with a variety of toppings. The mixture can be made ahead of time and lasts for several days in the refrigerator. In fact, the patties are even easier to form when the mixture is refrigerated for 20 minutes or more (but not necessary).

Ingredients:

  • 2 cups Quinoa cooled completely
  • 2 eggs
  • 1 1/4 cup bread crumbs (gluten free bread crumbs work well too )
  • 1/2 cup chopped onion
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mashed black beans
  • 2 T tomato paste
  • 3 garlic cloves – pressed
  • 1/2 t salt
  • 1/2 t pepper
  • 1/2 t cumin
  • 1/4 t red pepper flakes (optional)
  • 2 T water
  • EVOO for cooking (enough to coat the pan)

Bun choices: Brioche bun, Potato bread bun, English Muffin (optional)

Equipment Needed:

  • Cast Iron Skillet or Non Stick Pan

How to Make Black Bean Quinoa Patties

In a medium size bowl, combine all the ingredients except the EVOO.

Fold the ingredients together in the bowl until they are well blended and you can form patties in your hand.

Pour enough EVOO to coat the skillet.

Be sure to heat the oil before carefully placing the patties in the skillet. Cook the patties on medium heat (you may need to lower the heat depending on your stove) – approximately 5 – 6 minutes per side.

Place all the patties in the skillet at the same time (form them all before cooking so they cook at the same temperature).

The outside of the patties will get nice and crispy!

Monitor the heat so the outside doesn’t burn.

  • Hummus
  • Avocado
  • Onions
  • Pickles
  • Fresh Mozzarella
  • Sriracha Sauce
  • Sauteed Spinach & Garlic
  • Anything you want!
